Description

Soumbara Lafri is a typical condiment made from soumbara, a fermented bean. This flavorful blend is often used to add a spicy, umami twist to dishes, providing a rich, distinctive taste.

Ingredients

  • 100g powdered soumbara from @tcheris_market
  • A few grains of soumbara
  • 500g of local rice from @tcheris_market
  • Coriander powder, paprika, pepper, cumin, salt, herbs de Provence, chili powder, garlic powder, dried fish powder, shrimp powder
  • Oil
  • 1 onion cut into strips
  • 8 okra, roughly cut
  • 10 white eggplants, roughly cut
  • Water
  • 2 bay leaves

Preparation

1. In a vase, mix all your spices, soumbara powder and set aside

2. In a saucepan, heat the oil and add your sliced ​​onion as well as the soumbara grains, salt and pepper

3. Mix and brown the onions


4. Add the previously washed and drained rice, stir


5. Add about 1 liter of water, the okra and the cut eggplant


6. Stir and let cook

7. Once the water has completely evaporated, cover with baking paper, reduce the heat and leave to cook quietly for at least 10 minutes

8. Halfway through cooking your rice, make a hollow in the rice and add your spice mixture

9. Cover and cook for another 5 minutes

10. Once your rice is cooked, mix everything vigorously (you can add a little oil at this stage if you wish) and serve

11. Add your protein (meat, fish, shrimp, etc.) and enjoy!
